This research aimed to estimate the Physical and chemical composition of The Phongsaly green tea (PGT), Champasak green tea (CGT) from Lao People’s Democratic Republic (Lao PDR) and Oolong green tea (TGT) from Thailand were analyzed. All samples were bring to dries and grain to the powder, then storage in the aluminum foil and give in the vacuum bag at the temperature -18+2 oC until analysis. From the result of the physical were showed color (L*, a*, b*) with significant difference (p≤0.05). In addition, chemical composition analysis was exhibited Water activity (aw), ash, total soluble solid and the antioxidant activities with non-significant difference. Anyway, The GTP sample found higher of Catechin with 1.79 mg/100 ml, EC 11.28 mg/100 ml when compared with the GTC and GTA samples at (p≤0.05). In another hand, when comparison of Catechin derivative was showed that The GTC sample was heighted of total phenolic content, EGCG, GC, Caffeine with 377.3 mg GAE/g dry, 104.19 mg/100 ml, 21.51 mg/100 ml ແລະ 54.93 mg/100 ml respectively. Among the 3 samples, lowest of chemical composition was fond in the GTA sample. So, from the result indicated the GTP and GTC sampleswas good physical and chemical composition compared with another samples.
